Investing in processing facilities is expensive, requires space and legal permissions etc. Buying processing elsewhere is also expensive and is often not even a possibility. Many projects and good ideas will never come to be realised because of problems involving processing. This is particularly true for farmers living in remote areas – in Denmark as well as in developing countries.
